Terres Dorées Nouveau is different from the vast majority of “commercial” Beaujolais Nouveau. Even the popular small-grower Nouveau are made from under-ripe grapes, injected with commercial yeasts, doped with sugar to raise the alcohol. Domaine des Terres Dorées Beaujolais Nouveau is made using ancient and natural techniques. The grapes are hand harvested and the wines are fermented with indigenous yeasts using traditional Burgundian vini cation, not carbonic maceration. No chaptalization is done and SO2 levels are minimized to keep the wine “headache-free.” The result: a pure, delicate, complex wine, not a candied, tutti-frutti style.
